Healthy Choice Mediterranean Pasta

healthychoicemedpastaMade with extra virgin olive oil and whole grains, the Healthy Choice Mediterranean Pasta is comprised of “9-grain orzo pasta and red rice topped with northern beans, sweet apples and cranberries.” I love dishes that incorporate fruit, so I’m looking forward to the overall combination. Other ingredients listed on the package include spinach, fontina cheese, tomatoes, and onions.

 Fiber-liscious

 As I wait for the food to cook (3 ½ to 4 ½ minutes in microwave), I read the box. Holy cow…12 grams of fiber. Did I read that correctly? This is probably the highest percentage of fiber that I’ve encountered in a frozen entrée…and I’m a fan of fiber!

It Looks Like… 

Visually, the Mediterranean Pasta is inviting and looks like something you’d find as a side dish served at a fancy restaurant – no lie. I usually take a picture of the finished product, but I was hungry so trust me when I say that it looks just like the packaging image (without the shine of camera lights).

The Taste

The taste is very impressive. One bite offers the sweetness of apples, while the next is slightly cheesy. I really think the addition of apples elevates this dish. Eat slowly to truly savor the combination of flavors. I’m also inspired to investigate a recipe similar to this dish so that I can make a larger portion at home, so if you come across something I can work with – please share.
