IHOP Cheesecake Pancakes

Last year, the International House of Pancakes (IHOP) ran a promotion called Discover America Pancakes, where you could choose from different pancake choices on a monthly basis. It was a summer special in honor of the restaurant’s 50th birthday. One of the selections featured was New York Cheesecake and I’m pleased to learn that IHOP decided to make it a permanent fixture on its menu. I’d like to share with you my favorite two cost-effective and satisfying ways to order the cheesecake pancakes:
#1 Combo: Order the combo that comes with two slices of bacon, scrambled eggs, and hash browns (which were cooked to my liking – crispy). A saucy strawberry mixture topped the pancakes, joined by whipped cream and powdered sugar. What catapults the flavor is the chunks of cheesecake inserted into the pancake batter, which unexpectedly burst into creamy sweetness. Since you never know when one of these pockets of deliciousness will emerge, it is a welcomed surprise. However, depending on who prepares your pancakes, you may find too many or too few cheesecake bits.
#2 Omelet with Pancakes: A hearty breakfast that easily stretches into two meals is to order an omelet, which comes with a side of buttermilk pancakes. For $1.99, you can upgrade to the cheesecake pancakes – well worth the extra dollars. The Chicken Fajita Omelet is outstanding, which comes with cheese, green peppers, onions, grilled chicken, sour cream and salsa. I order the sour cream on the side for a dip and skip the salsa because it makes the omelet soggy.
